That isn't the point. The point is... additional Apple software shouldn't come up checked at all.

If you have Apple Update configured to automatically notify you of updates for installed software, it used to only pop up when updates were available. With the Safari "update", it pops up all the time until you actually go ahead and install it... or disable the automatic notifications altogether. What a pain in the ass.

I haven't even installed Quicktime on my rig, how much am I missing out? (recent reinstall, haven't quite gotten back to normal). Would Mplayer work just as well, or is it's implementation of .MOV files cumbersome?

This was way overblown imho. To even find this I had to dig through Start Menu, find the Apple Software updater (which I never use), where it gives you the option of updating software along with installing Safari. I wouldn't call that "forced" at all.

It also happens the other way around - part of my job is light web development and so I had Safari, and I gained iTunes and Quicktime in the last update (before today's).

Thing is, they've made a concession by splitting it into a "New Software" section, but there's still a problem in that it's checked by default. Offering to install Safari is one thing, installing it unless you specifically opt out is quite another.
